Further information
This species is a direct ancestor of all cultivated beets. Evidence suggests it has began cultivation in the Middle East about 2000 years ago. Leaves are picked between April and October. The big fleshy leaves from the base and the thinner spear like leaves from the tip are the easiest to cook.
